Who should take HACCP training?

Food hygiene training, made mandatory since 2012 by the legislator, is aimed at commercial catering establishments that provide meals and drinks for immediate consumption.

Among the categories of establishments concerned, we find:

  • Classic restaurants
  • Restaurants in hotels, vacation clubs
  • The bars offering food
  • Restaurants and bars located on board means of transport (trains, boats, etc.)
  • Self-services and cafeterias (including those located in a space where catering is not the main activity, such as a supermarket)
  • Fast foods and restaurants offering take-away or delivery, for consumption on site or not
  • Vendors of prepared products in markets or kiosks (snacks)
  • Food trucks (food trucks, pizza trucks, beach kiosks)
  • The tea rooms
  • The caterers

The nature of the activity (permanent or occasional, main or secondary) and the legal status of the company are not determining factors. Thus, businesses, auto-entrepreneurs and associations are all concerned.

Who is exempt from this training?

Some profiles and sectors are not required to follow this training. For example, we find:

  • Chefs who prepare meals in private homes,
  • Caterers in supermarkets
  • Guest tables, provided that they meet the legal definition of “table d'hote” (complementary activity, a unique menu offered only to the persons accommodated, and the meal is served at the family table)
  • Food professionals: butchers, charcutiers, bakers, bakers, pastry chefs, fishmongers, who offer prepared meals, sandwiches, salads...
  • The “hot spots” of stores equipped with a few tables to eat while standing.

Did you obtain a CAP, BEP, BTS or even specialized BAC diploma after 2006? Or do you have three years of experience as an operator or manager of a catering establishment? Please note that you are also exempt from this training.

It is important to note that HACCP certification is not specific to a specific location. Thus, if you change establishment (in case of resumption for example), you can keep your accreditation.

What organizations are authorized to offer HACCP training?

To obtain permission to propose a HACCP training, a training organization must meet two conditions:

  • It must have a number assigned by the DIRECT
  • He must have a ROFHYA number

To obtain authorization to provide training, the organization must have a number assigned by the DIRECCTE (Regional Directorates for Businesses, Competition, Labor and Employment). This number must appear in the training agreements issued by the training organization. On a quarterly basis, DIRECCTE publishes a file containing the activity numbers of all training organizations.

In addition to this, to be able to provide food hygiene training in the catering industry, your training organization must have a ROFHYA number. The DRAAF (the Regional Directorate for Food, Agriculture and Forestry) of the region where the training is taking place is the organization responsible for issuing this number. Each region therefore has its own DRAAF. DRAAF publishes a list of all registered training organizations online, with their corresponding ROFHYA number.

Attention: You must indicate this number on the certificates of successful completion of the training, as well as on the training agreements.
