A cold store plays an important role within the company in that it ensures the preservation of certain specific or perishable goods. Indeed, it allows products to be stored at low temperatures. But more exactly, what is a cold store? In this article, discover everything you need to know about cold storage, in other words: its role, the different types, its design as well as the refrigeration regulations of a warehouse.

What is a cold store?

A cold store is a place used to store, supply, and prepare for shipment of perishable products. They are mainly foodstuffs, hence the name of food warehouse, but also pharmaceutical products in some cases. It is therefore a warehouse dedicated to the treatment of goods at low temperature using a cold source and good insulation in order to extend their life cycle. However, what makes a cold store unique is the importance of maintaining Temperatures, especially to a specific degree. Not only to keep the products in good condition, but also to ensure their hygiene. We can find two categories of foodstuffs to be stored in cold stores:

    • Chilled products: these goods are stored at a temperature between 0 and 10° C, i.e. in positive cold. It can be vegetables, dairy products, charcuterie...
    • Frozen products: the latter are stored at a temperature between -30 and 0° C, so in negative cold storage. It includes prepared meals, ice cream, etc.

You should know that throughout the logistical processes, i.e. the storage, reception, reception, preparation and shipping of orders, it is necessary to ensure constant temperature control to keep the products in good condition.

The different types of cold stores

There are different types of cold stores with certain particularities in terms of structure and organization according to the different needs of the company. Namely:

    • The traditional warehouse which consists of stacking several pallets. Indeed, the stacking of pallets allows mass storage. On the other hand, the traditional warehouse is equipped with racks that may or may not be mobile, some of which are equipped with stackable containers with 4 to 5 storage levels. The latter can be stacked empty or full.
    • The platform warehouse: This type of cold store is more suitable for groupage and unbundling operations due to the presence of numerous loading and unloading docks. In addition, it also contains a cold room.
    • The mezzanine cold store: In a mezzanine cold store, pallets are mainly moved vertically with a freight elevator or fork truck. This type of cold store is most often used for storage and order preparation.
    • The high-rise cold store: As the name suggests, these are premises with a height that can reach between 23 and 45 m. The latter requires a stacker crane, which is an automated or non-automated device that allows pallets to be stored in a rack. The high-bay cold store guarantees a capacity of cold storage important.

What are the roles of cold storage in logistics?

As mentioned earlier, cold storage plays an important role in logistics, as it allows good management of the flow of perishable goods. It allows companies offering perishable goods to carry out all logistical processes without risking product degradation. In other words, the latter not only ensures the storage of products, but also the reception, order preparation and distribution of products while guaranteeing their safety. On the other hand, the efficiency of the warehouse reassures customers, because the condition of the goods certifies the reliability of the preservation of foodstuffs and the professionalism of the company. Indeed, a large part of the company's performance is based on the proper functioning of the cold store. Each zone counts, as does the thermal insulation of each one.

How is a cold store designed?

Cold stores are much more complex than cold storage of fruits and vegetables, as it is essential for them to maintain a low temperature in order to preserve the products properly. Therefore, the warehouse design must be based on the needs as well as the specificities of the company. To ensure good performance, it is essential to take into account every detail concerning the products and the company. Thus, the criteria to be monitored are as follows:

    • The capacity to receive goods
    • The types of products to be stored
    • Merchandise shipping capacity
    • The number of daily orders
    • The storage systems used
    • The degree of warehouse automation
    • Etc.

All these elements make it possible to set up the tools and materials necessary for the proper functioning of the entire warehouse. In general, all logistics areas in the cold store should be able to maintain a low temperature. This includes the structure of the rooms to preserve the cold in the rooms, but also the installation of refrigerated doors with a prechamber to avoid temperature change. In short, cold store design requires a thermal insulation flawless. This is why there are numerous regulations on its equipment.

Refrigeration regulations for a warehouse

The safety of fragile goods is essential, especially for foodstuffs. To ensure this, cold stores are subject to regulations. Their equipment must therefore meet these various rules:

    • Presence of a lighting device
    • Reinforced insulation
    • The presence of a sealing device on the loading and unloading dock
    • The presence of a temperature control system
    • Natural ventilation
    • The presence of a leak and fire detector
    • The presence of gas defrosting
